Description
This is a healthy vegan version of the famous salad invented at New York’s Waldorf-Astoria hotel.
Ingredients
1/4 pint (1/2 cup) red grapes cut in half
1/4 pint (1/2 cup) green grapes cut in half
One red apple (cored and chopped)
One green apple (cored and chopped)
Two slices celery (sliced)
One lemon
Four tablespoons of plain vegan yogurt or vegan greek yogurt
One teaspoon of Dijon mustard
One tablespoon maple syrup (optional)
1/4 cup chopped walnuts
One head of Bibb Lettuce (Romaine Lettuce would also work)
Instructions
Before you start, ensure you have all the ingredients you need.
Slice the grapes in half.
Slice the celery thinly.
Core and chop the apples.
Place the apples, celery and grapes into a medium bowl and toss with the juice of half a lemon. The lemon juice will prevent the apples from turning dark.
For the Dressing:
In a separate bowl, whisk together the yogurt, mustard, and the juice of half a lemon.
Pour half of the dressing over the apple mixture and stir to combine. Divide lettuce over four plates and top with the apple mixture.
Drizzle the remaining sauce over the salads. Garnish with chopped walnuts. Serve and enjoy!
