The Health Benefits of a Vegan Waldorf Salad

A Vegan Waldorf salad offers several health benefits due to its nutrient-rich ingredients. Here are a few:

  1. Rich in Nutrients: A Nutritional Powerhouse
    • The salad includes fruits and vegetables like apples, celery, walnuts, and grapes, packed with essential vitamins, minerals, and antioxidants that support overall health and well-being.
  2. High in Fiber: Promoting Digestive Health and Weight Management
    • The fibre content from fruits and vegetables helps improve digestion, promotes regular bowel movements, and creates a feeling of fullness, potentially supporting weight management goals.
  3. Low in Saturated Fat: Supporting Heart Health
    • Opting for yoghurt instead of mayonnaise in the dressing reduces saturated fat content, lowering the risk of increased LDL (harmful) cholesterol levels and contributing to heart disease prevention.
  4. Beneficial for Gut Health: Cultivating a Healthy Microbiome
    • Yoghurt, a probiotic food, contains live bacteria that promote a healthy gut microbiome. A balanced and diverse gut microbiome supports improved digestion, enhanced immune function, and improved mental health.

Incorporating this vegan Waldorf salad into your meals lets you relish a refreshing and flavorful dish while reaping its potential health benefits.

Description

This is a healthy vegan version of the famous salad invented at New York’s Waldorf-Astoria hotel.

Ingredients

Scale

1/4 pint (1/2 cup) red grapes cut in half

1/4 pint (1/2 cup) green grapes cut in half

One red apple (cored and chopped)

One green apple (cored and chopped)

Two slices celery (sliced)

One lemon

Four tablespoons of plain vegan yogurt or vegan greek yogurt

One teaspoon of Dijon mustard

One tablespoon maple syrup (optional)

1/4 cup chopped walnuts

One head of Bibb Lettuce (Romaine Lettuce would also work)

Instructions

Before you start, ensure you have all the ingredients you need.

Slice the grapes in half.

Slice the celery thinly.

Core and chop the apples.

Place the apples, celery and grapes into a medium bowl and toss with the juice of half a lemon. The lemon juice will prevent the apples from turning dark.

For the Dressing:

In a separate bowl, whisk together the yogurt, mustard, and the juice of half a lemon.

Pour half of the dressing over the apple mixture and stir to combine. Divide lettuce over four plates and top with the apple mixture.

Drizzle the remaining sauce over the salads. Garnish with chopped walnuts. Serve and enjoy!
