Spinach and Pea Salad Easy Vegan Recipe
This protein packed spinach and pea salad is easy to make, and is super nutritious. You’ll be getting all the benefits of leafy greens along with protein-packed peas and almonds, which are super good for your skin.
Almonds, good for your skin, you say? Why, yes, grasshopper. According to a recent study, post-menopausal women who snacked on them showed significant skin improvement in wrinkle severity.*

Description
You can throw this salad together in less than 3 minutes!
Ingredients
- 400 grams Peas ((if using frozen, allow time to defrost before serving salad))
- 2 lemons (juiced)
- 90 grams spinach
- 85 grams almonds
- 3 tsp olive oil (extra virgin)
Instructions
- Starting with the peas, add spinach, olive oil and the juice of two lemons. Toss to combine
- Season to Taste
- Finish off by adding almonds to garnish the salad. Enjoy.
