Two packages of instant wholegrain rice like this one here.
120 grams of washed spinach like this one here.
Two jalapeno peppers seeded & chopped Two teaspoons of ground cumin
1 teaspoon garlic powder
2 cans of red beans drained & rinsed (≈3 cups)
sea salt
freshly ground black pepper
Four spring onions sliced
1⁄4 cup fresh coriander chopped (optional).
Instructions
In a high-powered blender or food processor, pulse spinach, Jalapeno peppers, cumin, and garlic powder until vegetables are finely chopped. Add vegetable broth and process until smooth.
In a large pot, combine Kidney beans with green sauce and heat through. Add hot rice—season with salt and pepper to taste.
