This Blue-Berry Pie Overnight Oats recipe is so delicious; I can practically guarantee that you’re going to love it. There are so many overnight oats recipes around, but this one is extra special. You’ll want to eat these Blueberry Pie-flavoured Overnight Oats all day long! Comprised of juicy blueberries, plant milk, sunflower seeds, cinnamon and maple syrup, you can throw them together the night before and wake up to the breakfast of champions!

This recipe is so good, my youngest even ate it and loved it, and he is a very fussy eater, which makes this recipe fully kid-friendly.

Oats are a great staple to have in your diet as they act as a prebiotic, contributing to a healthy gut, which scientists are learning is so vital to your mental health and well-being. Sunflower seeds are a great source of omega-3s, and cinnamon is an antioxidant with anti-cancerous properties. Blueberries have been proven to boost your cognitive function, and maple syrup has health-giving properties too! It contains numerous antioxidants and supplies essential vitamins and minerals.

This easy vegan overnight oats recipe is so yummy, you'll be coming back for more!


Ingredients

Scale
  • 4 cups unsweetened soya milk
  • 2 1/2 cups oats
  • 2 tsp. cinnamon
  • 2 tbsps. maple syrup
  • 1/2 cup sunflower seeds
  • 4 cups blueberries

Instructions

  1. In a medium bowl, combine all ingredients well.
  2. Distribute the contents of the bowl evenly into two 1/2 litre jars and store overnight in the refrigerator.
