Easy Vegan Dinner – KFC Chicken Recipe

When I first posted this Easy Vegan KFC Chicken Recipe on my Instagram page, people went a bit nuts. It was one of my most popular posts ever for a reason. People who are eating plant-based don’t want to sacrifice taste. You can definitely still cook delicious and familiar foods using different techniques to still get all the flavour. I find that when I veganise recipes, they often even surpass the original in taste. Besides, who doesn’t want to have Vegan KFC Chicken for their Dinner?
There are so many ways that we can veganise the foods we grew up with, that there really is no reason not to eat vegan and this recipe is a great example of that.

Learn how to make Vegan KFC Chicken using this easy vegan dinner recipe, for a cruelty-free easy vegan dinner idea.
Ingredients
Wet Batter Mixture
- 1 cup Almond Milk
- 1 ½ tbsp Apple Cider Vingear
- 1 tsp Sriracha Sauce (optional)
Dry Batter Mixture
- 3/4 cups All-Purpose Flour
- 1 tbsp Baking Powder
- 1 tbsp Chicken Seasoning
Vegan Honey Mustard Sauce
- ½ cup Vegan Mayonaise
- 2 tbsp Maple Syrup
For Frying
- 2 tbsp coconut oil (add more as needed)
Instructions
Prepare the Vegan Honey Mustard Sauce
- Combine the sauce ingredients and divide among four small bowls for dipping.
Prepare the Jackfruit
- Drain the jackfruit and rinse being careful not to break up the jackfruit peices.
- Set aside
Prepare the Wet Batter Mixture
- 1 Whisk all the Wet Dipping Mixtures together in a medium bowl.
- Set Aside for five minutes while you make the dry batter mixture
Prepare the Dry Batter Mixture
- Add all the dry ingredients together in a medium bowl and set aside.
Create the Batter
- Dip the jackfruit pieces first in the wet batter mixture and then into the dry batter mixture taking care to add as much of the dry mixture as possible to create a thick crust. You may need to have a few passes of wet then dry batter ingredients to get a nice thick coating on the jackfruit pieces.
Frying the Vegan KFC chicken
- Set the oven to 100 degrees celcius and as you cook the pieces put them on a baking tray in the oven to keep warm.
- Fry on a medium high stove-top, starting with 1 tablespoon of the coconut oil and adding more as necessary. When the pan is nice and hot, add your thickly battered jackfruit peices and cook for approximatley 5 minutes per side, taking care not to burn the batter.
- Continue to fry the jackfruit, working in batches before transfering to the oven to keep warm until you're ready to serves them.
- When completed, serve with the Vegan Honey Mustard Sauce and enjoy this easy vegan, cruelty-free dinner!
