Easy to Make Broccoli Dish

This easy to make broccoli dish is delicious hot or cold.

This Easy Epic Broccoli and Feta salad is the best broccoli dish ever. It’s so effortless to make and tastes out of this world good. You, and everyone you make this for, will love the flavour combos in the recipe; I can practically guarantee it!

The tangy dressing, feta, and juicy cherry tomatoes are a match made in heaven. The spring onions take it to another level altogether.

The Health Benefits of this Broccoli Dish

Broccoli is something we should be eating as often as possible to reap the numerous health benefits it gives us. There are so many great things that this superfood does for our bodies! Broccoli is full of vitamin B5; Broccoli is known to reduce inflammation, bolsters the immune system, protects against air pollution, keeps bones sturdier, lowers the risk of Chron’s disease, reduces the risk of breast cancer and helps detoxify the body. It promotes good gut health, which has a positive impact on our mental health. Broccoli improves immunity and is useful for reducing inflammation in tissue and regulating blood sugar.

Easy & Epic Broccoli, Tomato & Vegan Feta Salad

Description

Make this broccoli dish in 20 minutes and serve hot or cold. My easy Epic Broccoli and Feta Salad is a great way to get the health benefits of broccoli.


Ingredients

Scale

Dressing

  • 1 tbsp olive oil
  • 1 tbsp cider vingegar
  • salt and pepper (to taste)

Salad

  • 225 grams cherry tomatoes (halved)
  • 4 spring onions (chopped)
  • 100 grams vegan feta ((I like the one by Violife))
  • 2 heads broccoli
  • 3 sprigs thympe (optional)

Instructions

  1. Comibine your oil, vinegar and seasoning into a large bowl.
  2. Break the feta into chunks and add to the bowl with the dressing
  3. Separate the broccoli into small florets. You can use the stalks too by peeling them and slicing thinly.
  4. Cook covered in a few centimetes of water for approx. 4 minutes, being careful not to overcook.
  5. Drain broccoli and pat dry.
  6. Add broccoli to the other ingredients and add thyme, removing leaves from the stalk first.
  7. Serve immediately while warm or enjoy cold.
