My Apple with Broccoli Salad recipe is one that I return to repeatedly because it’s an incredible health booster, easy to make and oh so tasty!
Broccoli is full of health-giving, anti-cancerous properties. It’s a great source of vitamin C, it is packed with fibre that makes us feel more full longer thus preventing overeating. It fights inflammation, and its phytochemicals help us to rid our bodies of toxins.
In fact, Broccoli is so good for our bodies that we really ought to be aiming to eat it every day.
When cooking broccoli, like cooking most veggies, low and slow is the healthiest way to go. I find steaming it until just tender, is the best way to preserve the nutritional value potential.

Healthy Apple with Broccoli Recipe
Description
This fast and healthy salad with broccoli recipe is one you’ll come back to again and again! It is great on its own but also makes a versatile side dish!
Ingredients
300 grams broccoli cut into florets
1 red or green apple
40 grams sunflower seeds
2 tablespoons olive oil
1 tablespoon apple cider vinegar (preferably raw)
1.5 teaspoons dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Instructions
Combine ingredients into a food processor and pulse. Stir and pulse again, repeating until veggies are bite-sized. Serve & Enjoy!
