  • 1 tablespoon olive oil
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 block firm tofu, drained and crumbled
  • 2 tablespoons nutritional yeast
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 red bell pepper
  • Salt and pepper to taste
  • Optional toppings: avocado slices, chopped fresh herbs (such as cilantro or parsley)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Allow it to warm up while you prepare the vegetables.
  2. Dice the onion, mince the garlic, and chop the bell pepper into small pieces.
  3. Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until they become translucent and release their aromatic flavours.
  4. Now, it’s time to add the diced bell pepper and sliced mushrooms to the skillet. Cook for another 5 minutes, stirring occasionally, until the vegetables become tender and slightly caramelized.
  5. While the vegetables are cooking, drain and crumble the firm tofu. You can achieve a scrambled egg-like texture by using a spatula or fork to break it into small pieces.
  6. Once the vegetables are cooked to your liking, add the crumbled tofu to the skillet. Stir well to combine all the ingredients and distribute the flavours evenly.
  7. Sprinkle the nutritional yeast, turmeric, paprika, salt, and pepper over the tofu mixture. These spices will bring out vibrant colours and enhance the overall taste of the scramble. Mix thoroughly until the tofu is evenly coated.
  8. Continue cooking the tofu scramble for about 5-7 minutes, occasionally stirring until the tofu is heated and lightly browned. This process melts the flavours together and gives the scramble a satisfying texture.
  9. Take a moment to taste the scramble and adjust the seasoning if needed. Feel free to add more salt, pepper, or spices according to your preference.
  10. Remove the skillet from the heat and transfer the tofu scramble to serving plates. The aroma alone is enough to make your mouth water!
  11. For an extra touch of freshness, garnish the scramble with avocado slices and chopped fresh herbs like cilantro or parsley. These toppings add a pop of colour and provide flavour to every bite.
