Easy Red Beans and Green Rice Recipe

Description

This fast and nutritious meal is so easy to make and oh so good!


Ingredients

Scale
Two packages of instant wholegrain rice like this one here.
120 grams of washed spinach like this one here.
Two jalapeno peppers seeded & chopped
Two teaspoons of ground cumin
1 teaspoon garlic powder 
2 cans of red beans drained & rinsed (≈3 cups)
sea salt
freshly ground black pepper
Four spring onions sliced
1⁄4 cup fresh coriander chopped (optional).

Instructions

In a high-powered blender or food processor, pulse spinach, Jalapeno pepperscumin, and garlic powder until vegetables are finely chopped. Add vegetable broth and process until smooth.

In a large pot, combine Kidney beans with green sauce and heat through. Add hot rice—season with salt and pepper to taste.

Top with spring onions and coriander, and serve.
